This loaf begins with semolina flour, milled from the heart of the durum wheat berry. It's golden colour and rich flavour have made it a staple in traditional Sicilian pane rimacinato for generations. Drawing inspiration from the beloved Tartine Bread Book, our bakers have added orange zest, black sesame seeds, golden flax seeds and black currants to create a loaf that's both familiar and unexpected. The sweetness of the currants, the brightness of citrus and the nutty crunch of whole seeds complement the complex flavours of our sourdough.
